Exploring the world of Strawberries – with 3 strawberry recipes!

Over here at The Berry Dairy, we love all things strawberries -and you may have guessed it, but they are our favourite fruit! Our strawberries are delicious fresh straight from the patch, but if you manage not to eat all your strawberries before you get home, here are some ideas on what to do with them!

Strawberries are delicious, and my favourite way to have them is drizzled with chocolate! But, they also boast an array of health benefits that make them a nutritious addition to any diet (and help counterbalance the chocolate haha!) Packed with vitamins, minerals, and antioxidants, these vibrant fruits are a powerhouse of nutrients. Which is why we love creating new ways and recipes to enjoy them. 

First up, we have a delicious smoothie that has an array of health benefits, and both adults and kids will love! Then we go into a couple of baking options, easy recipes that are great to get the kids involved in too! We have loads of berries in our fields, so head on down, pick some berries then get cooking! A great activity to involve children too into knowing where their food comes from. 

Energy Boosting Strawberry Smoothie
Ingredients
Fresh strawberries
Ripe banana
Greek yoghurt
Honey (optional)
Almond milk (optional)
Ice cubes
Method
Add all ingredients into a blender and mix! If you want your smoothie a bit thicker then add more ice. Enjoy in a tall glass and a straw!

Delicious Strawberry Crumble
Served with Vanilla ice cream this is just too good not to make!
This recipe serves 6.
Ingredients
TOPPING
¾ cup rolled oats
¾ cup white flour
¾ cup brown sugar
½ tsp baking powder
¾ tsp cinnamon powder
Pinch of salt
6 tbsp unsalted butter

FILLING
1kg of fresh Strawberries
2 ½ tbsp cornflour
½ cup white sugar
2 tbsp water
1 tsp vanilla extract
Method
Preheat oven to 180C
TOPPING – Place all ingredients except butter in a bowl. Mix to combine. Add bitter and mix to incorporate.
FILLING – cut top off strawberries. Cut larger ones in half, leave small ones whole
Place strawberries in a bowl. Scatter over cornflour, toss well to coat evenly.
Add sugar, water and vanilla. Mix well.
ASSEMBLE – Pour strawberries into a baking pan, crumble over topping, using your fingers to get some nice crumbly chunks.
BAKE – bake for 30 to 40 minutes until the topping is deep golden and the strawberry syrup is bubbling up around the edges.
Let stand for a few minutes before serving with ice cream or your choice of topping.

Super Easy Strawberry Cheesecake
1tsp vanilla essence 
600g full fat cream cheese
100g icing sugar
284ml pot of thickened cream
TOPPING
400g punnet of strawberries halved
Method
To make the base, butter and line a 23cm loose bottomed tin with baking paper. Put the digestive biscuits in a plastic food bag and crush crumbs using a rolling pin. Transfer the crumbs to a bowl. Then pour over the melted butter. Mix thoroughly until the crumbs are completely coated. Tip them into the prepared tin and press firmly down into the base to create an even layer. Chill in the fridge for 1 hour to set firmly.
Pour the double cream into a bowl and whisk with an electric mixer until it’s just starting to thicken to soft peaks. Place the soft cheese, icing sugar and vanilla essence into a separate bowl, then beat for 2 mins with an electric mixer until smooth and starting to thicken, it will get thin and then start to thicken again. Tip in the double cream and fold it into the soft cheese mix. You’re looking for it to be thickened enough to hold its shape when you tip a spoon of it upside down. If it’s not thick enough, continue to whisk. Spoon onto the biscuit base, starting from the edges and working inwards, making sure that there are no air bubbles. Smooth the top of the cheesecake down with the back of a dessert spoon. Leave to sit in the fridge overnight.
Bring the cheesecake to room temperature about 30 minutes before serving. Take out the tin and remove baking paper. Puree half the strawberries in a blender or food processor with the icing sugar and 1 tsp water, then sieve. Pile the remaining strawberries onto the cake and pour the puree over the top.
